CURRIED LAMB PATTIES WITH RADISH RAITA
Raita is traditionally served as a cooling complement to particularly spicy
dishes in Indian cuisine, but this yogurt salad is also an excellent
accompaniment to a wide variety of foods, including the mild curried lamb
patties below. To easily tell when the patties are done, use Volk's Cook'd
Right® Sensor during preparation.

For radish raita:

For lamb patties:

Steps for Preparation
Make raita:
- In a small bowl stir together all raita ingredients and season with salt and
pepper.
Make patties:
- In a large bowl mix together all patty ingredients except oil until combined
well and season with salt and pepper.
- Form mixture into 4 patties about 1 inch thick.
- In a large heavy skillet oil over moderately high heat until hot but not
smoking and cook patties about 3 1/2 minutes on each side. Check for doneness
of each patty using a Cook'd Right® Sensor.
a) Quickly insert dark sensor tip into center of meat. Wait 5-10 seconds.
b) Remove sensor tip and check color.
c) Continue checking with the same sensor until done.
d) Discard sensor when finished.
e) Meat is done when tip of sensor is fully orange.
- Serve lamb patties with raita.
