MUSTARD
CHOPS
To easily tell when the lamb chops are
done, use Volk's Cook'd Right® Sensor during preparation.

honey

mustard

Steps for Preparation
- Use twice as many rib or loin chops in place
of thick ones.
- Warm honey, mustard, salt, and pepper over
low heat; stirring continuously.
- Broil chops on one side until brown; brush
with honey mixture. Turn chops.
- Check for doneness of each chop using a Cook'd
Right® Sensor.
- Quickly insert dark sensor tip into center
of chop. Wait 5-10 seconds.
- Remove sensor tip and check color.
- Continue checking with the same sensor until
done.
- Discard sensor when finished.
- Chop is done when tip of sensor is fully
orange, at about another 5 minutes after turning.
- Brush chops again with glaze.
- Place on platter and serve with remaining glaze.
