APPLE SMOKED TURKEY BREAST

To easily tell when the turkey breast is done, purchase a bone-in turkey breast equipped with Volk's Pop-Up® Timer.
Servings: 6

Ingredients

2 Cups balsamic vinegar
1/4 Cup water
1/4 Cup sea salt
3 Tablespoons chili powder
2 Tablespoons black pepper
1/4 Teaspoon marjoram
1/4 Teaspoon dried lemon peel
1 3 to 3-1/2 pounds BONE-IN TURKEY BREAST


Preparation

  1. In large self-closing bag combine vinegar, water, salt, chili powder, pepper, marjoram and lemon peel.
  2. Place turkey breast in bag, seal and refrigerate at least 2 hours or overnight.
  3. Prepare grill for indirect-heat cooking. Add water-soaked applewood chips to hot coals.
  4. Remove turkey from marinade; reserve marinade.
  5. Place turkey, skin-side-up, on grill rack over drip pan.
  6. Cover and grill turkey breast 1 to 1-1/2 hours or buttonhead of the Timer "pops" up.
  7. Add water- soaked applewood chips to coals as necessary.
  8. In small saucepan, over high heat, bring reserved marinade to boil.
  9. Cool and brush over turkey breast every 30 minutes of grilling time.
  10. Remove turkey breast from grill and let stand 15 minutes. Slice turkey breast and serve.
