GLAZED ROAST TURKEY WITH CRANBERRY STUFFING

For cooking convenience, purchase a whole turkey equipped with Volk's Pop-Up® Timer.

Ingredients

    Cranberry stuffing (below)
1 12-pound whole turkey, thawed if frozen
2 tablespoons margarine or butter, melted
    Cranberry-apple glaze (below)
 

Cranberry Stuffing
1 cup (2 sticks) margarine or butter
1 1/2 cups chopped celery (stalks and leaves)
3/4 cup finely chopped onion
9 cups soft bread cubes (about 15 slices bread) or cornbread cubes
1/2 cup dried cranberries or raisins
2 tablespoons chopped fresh OR 1 1/2 teaspoons dried sage leaves
1 tablespoon chopped fresh OR 1 teaspoon dried thyme leaves
1 1/2 teaspoons salt
1/2 teaspoon pepper
 

Cranberry-Apple Glaze
8 ounces jellied cranberry sauce
1/4 cup apple jelly
1/4 cup light corn syrup

Preparation

  1. Heat oven to 325°. Prepare Cranberry Stuffing.

  2. Melt margarine in 10-inch skillet over medium heat.

  3. Cook celery and onion in margarine, stirring frequently, until onion is tender.

  4. Stir in about one-third of the bread cubes.

  5. Place in large bowl. Add remaining bread cubes and ingredients; toss.

  6. Stuff turkey just before roasting. Makes 9 cups stuffing (enough for a 12-pound turkey). (Note: To bake stuffing separately, place in greased 3-quart casserole or rectangular baking dish.)

  7. Cover and bake in 325° oven 30 minutes. Uncover and bake 15 minutes longer.

  8. Stuff turkey just before roasting. Fill wishbone area with stuffing first. Fasten neck skin to back with skewer. Fold wings across back with tips touching.
    Fill body cavity lightly. (Do not pack--stuffing will expand while cooking.) Tuck drumsticks under band of skin at tail, or tie together with heavy string, then tie to tail.

  9. Place turkey - breast side up, on rack in shallow roasting pan. Brush with margarine. Do not add water.

  10. Roast uncovered. When the Pop-Up Timer pops (approximately 3 hours), the turkey is done. The drumsticks should move easily when lifted or twisted.

  11. While turkey is roasting, cook giblets for gravy. Prepare Cranberry-Apple Glaze

  12. Mix all glaze ingredients in 1-quart saucepan. Cook over medium heat about 5 minutes, stirring occasionally, until melted and smooth. Makes 1 1/4 cups glaze.

  13. Brush glaze on turkey about 20 minutes before turkey is done.

  14. Place a tent of aluminum foil loosely over turkey when it begins to turn golden. When two-thirds done, cut band of skin or string holding legs.

  15. When turkey is done, place on warm platter and cover with foil tent. Allow to stand about 20 minutes for easiest carving.

  16. While turkey is standing, prepare gravy if desired.

  17. To serve, brush again with glaze before carving.
